What is Miso
Miso is made from cooked soybeans mixed with koji and water. Koji is cooked grain or soybeans treated with a mold which begins the fermentation process. General, the aging process may range between 2 months to 3 years, depending on the kind of miss being produced. The fermentation process improves the fifth flavor that explains why miso can improve flavor in soups. Also, miso sets the stage for gravies, stews, sauces, dips, marinades, salad dressings, and spreads.
Miso has two basic categories (light and dark) based on color and taste. But, there are various kinds of miso in Japan such as red miso (Akamiso), yellow miso (Shinsu miso) and white miso (Shiromiso). Differences among the different kinds of miso are based on the specific kind of koji used, every ingredient’s proportions, and the total fermentation time. By adding some rice, miso can become Komemiso. Miso made with a mix of oat or barley is called Mugi miso.

How to Eat Miso Soup
Miso soup is often served in a flexible plastic or wood bowl which can be squeezed out of shape. As the bowl’s shape changes slightly, air will rush into the bowl, making it easy to remove the lid.
Miso soup will have a cloudy appearance and will usually have pieces of seaweed and tofu floating inside. You can eat these floaters using your chopsticks. When you drink the soup, you must pick up the bowl with both hands and drink from it like a cup. As the cloud paste has started to settle, give the soup a little stir using your chopsticks.
